The cooking that I was particular about is offered, but there is a thing lacking umami taste. In addition, the bread is too hard.

A great experience in a superb gourmet restaurant, with all the characteristic of a starred Michelin spot. The ambient is modern and the food preparation represent the territory in a contemporary way. Each dish has an incredible balance where you can taste all the single ingredients. Service and sommelier are super professional and well prepared. I wish we can get back here soon

Food was amazing, we took My roots 8 dishes menu, and the majority of them was great. But unfortunately dishes were coming with very long breaks. Instead of 120 minutes our experience lasted at least 3 hours and a half.  By the time of desert we were too tired to appreciate it fully. Also wine pairing arrived later than some dishes and few choices of sommelier were a bit questionable. Generally very nice restaurant and worth the visit but have some room for improvement.

Il ristorante &egrave; parte della struttura che compone l&#39;Hotel Royal Paestum, quindi di facile accesso e dispone di un ampio parcheggio interno.L&#39;arredamento e la disposizione dei tavoli &egrave; sublime, ampi spazi e gusto nel creare la giusta atmosfera.Il personale &egrave; particolarmente gentile e preparato, come del resto ci si aspetterebbe da un ristorante stellato.La carta dei vini mi ha sorpreso, &egrave; incredibilmente vasta, tale da accontentare qualsiasi estimatore, sia di vini Italiani che esteri.Ho optato per uno dei due men&ugrave; degustazione presenti, che purtroppo non hanno incontrato completamente il mio personale gusto. Questa non vuole essere una critica allo chef: le materie prime sono eccellenti e abbinate secondo la sua visione di cucina, forse ero partito con un&#39;aspettativa differente. Avendo seguito il percorso dello Chef, mi sarei aspettato una cucina pi&ugrave; tradizionale e riconoscibile, invece si &egrave; rivelata molto pi&ugrave; &quot;spinta&quot; di quello che immaginavo, questo &egrave; un mio &quot;limite&quot;, poich&eacute; amo i sapori delicati.Credo che meriti una seconda (e una terza) occasione, per capire appieno le potenzialit&agrave; dei piatti, magari optando per un men&ugrave; differente.Il prezzo &egrave; assolutamente in linea con il tipo di ristorante.

The restaurant is part of the structure that makes up the Royal Paestum Hotel, so easy access and has a large internal parking.The furnishings and arrangement of tables are sublime, wide space and taste in creating the right atmosphere. It is particularly kind and prepared, as you would expect from a star restaurant.The wine paper has surprised me, it is incredibly wide, so that any estimator can satisfy, I chose one of the two degustation menus present, which unfortunately did not meet my personal taste completely. This does not want to be a critic of the cook: raw materials are excellent and are matched according to his cooking vision, perhaps I was going with a different expectation. After following the Chef&#39;s path, I would have expected a more traditional and recognisable kitchen, but it was much more &quot;impulsed&quot; than I thought, this is my &quot;limit&quot;, because I love delicate flavors. I think I deserve a second. (and a third) opportunity, to fully understand the potential of the dishes, perhaps by choosing a different menu.The price is absolutely in line with the type of restaurant.
