    易武,茶马古道的源头,千里贡茶第一站,是普洱茶最大的产区。下面这张图是我在一个老乡家里拍到的,图中标注着树林的每一个地名,都是一个“山头”,每个山头都在生产普洱茶。向导带着我们来到一处茶园,有两个瑶族阿妹正在采茶。在西双版纳这一片,傣族原来都是在平原上居住的,而瑶族则在山区,所以茶山上,更多的是瑶族的村落。我们也跟着两个瑶族阿妹学习采茶,运用有技巧的手法,可以促使茶树更多的发出嫩芽。普洱的茶山不同于别处,即便是台地茶,也都是在比较陡峭的山坡上,其实还挺危险的。在易武,每年的春秋两季最为忙碌,白天采茶、晚上就制茶。普洱指的并不是一种茶树的名字,而是从茶树到制作的一整套工艺。我们跟着当地的茶农“阿平”学习普洱茶(生茶)的制作。杀青:在斜锅上翻炒30-40分钟揉捻:在簸箕上揉成团并揉搓20分钟左右甩条:把揉捻后的茶叶甩直成条晾晒:天气好的时候,晾晒一天即可完全成型看着轻松,真的上手后简直要命。直径一米以上的大锅就冲着脸,腾腾的热气扑上来,真的很难独自坚持完成,我和三土君车轮战才把它搞定。
